Hot Coco-Choco
























Waar is het fijner mee opwarmen na een middag natte sneeuwpret? Melkvrij, granenvrij, notenvrij en zonder geraffineerde suiker genieten met een lekker warme coco-choco <3

3 cups kokosmelk
1 cup water
4 tbsp cacao 
2 tsp carobepoeder 
optioneel: mespuntje kaneel
naar smaak zoeten met palmsuiker, honing, stevia of xylitol
(ik gebruikte 2,5 tbsp palmsuiker en 5 druppels stevia)

3 cups coconut milk
1 cup water
1 tbsp cacao powder
2 tsp carob powder
optional: pinch of cinnamon
sweeten to taste with coconut palm sugar, honey, stevia or xylitol
(I used 2 1/2 tbsp coconut palm sugar and 5 drops of liquid stevia)

Minty Green Superpower Balls


Deze balletjes maakte ik als variatie op een van mijn favoriete recepten (die je o.a. hier kunt vinden). Ik ben dol op walnoten en op kokos, en van een beetje zoetigheid ben ik ook niet vies ;)... en dus is de combinatie walnoot, dadel en kokos uitgangspunt voor menig lekker hapje. (Ook ideaal als taartbodem overigens!). Deze balletjes zijn door de toevoeging van gerstegraspoeder niet alleen supergezond, maar ook mooi heldergroen van kleur. Wist je dat gerstegras meer eiwitten bevat dan biefstuk, 5 keer meer ijzer dan broccoli, 7 keer meer vitamine C dan sinaasappel en 11 keer meer calcium dan melk? Daarnaast zit het bomvol met vitaminen en andere voedingsstoffen voor een blakende gezondheid en bevordert het ook de opname van andere belangrijke voedingsstoffen. I made these balls as a variation to an old time favorite recipe of mine (wich you can find here). I adore walnuts and coconut! 1 cup walnoten (liefst geweekt)
5 medjool dadels (of iets meer van de goedkope, kleinere variant)*
1/4 - 1/2 cup kokosrasp
1 eetlepel kokosolie
2 theelepels gerstegraspoeder
naar smaak fijngesneden verse munt

*Check de verpakking:  pas op voor toegevoegde suikersiropen

Smelt de kokosolie au bain marie. Doe alle ingrediënten in de foodprocessor of hakmolen en pulseer een paar keer. Doe dit net zolang tot er een kneedbare massa ontstaat, waarin nog duidelijk stukjes walnoot en dadel te ontdekken zijn. Maak vervolgens balletjes door het mengsel samen te drukken tussen de vingertoppen van beide handen (rollen lukt niet). Rol de balletjes door de kokosrasp, laat ze even opstijven in de koelkast en serveer met een takje verse munt! <3

1 cup walnuts (best soaked)
6 medjool dates (or a little more of the cheap, smaller ones)*
1/2 cup shredded coconut
1 tbsp coconut oil
2 tsp barley grass powder
finely chopped fresh mint, to taste

*Check the label: some may contain added sugar syrups

Melt coconut oil in a bain marie. Put all the ingredients in a food processor or the chopper attachment of your stick hand blender. Pulse a coulpe of times. Repeat until you have a formable mass, in which you can still define pieces of walnut and date. Form balls with the fingertips of both hands (rolling won't work). Roll through some shredded coconut, let them harden in the fridge for a short while and serve with a twig of fresh mint! <3

Apple crumble pie GF, EF, DF

Vorige week werd mijn lieve dochter vier jaar! Vier jaar geleden alweer dat ik voor het eerst moeder werd. Na de herfstvakantie begint ze in de kleuterklas van de vrije school. En hoewel het ook een moment van loslaten is, vind ik het vooral ook heerlijk om haar zo te zien groeien en verheug ik me erg op mijn heuse kleuter <3 

Traditioneel eten we in ons gezin op verjaardagen altijd appeltaart voor het ontbijt. En die maak ik natuurlijk zelf, al wordt het recept ieder jaar weer wat aangepast. Sinds vorig jaar is het een glutenvrije, eivrije, melkvrije taart. Dit jaar was hij ook rijstvrij en kon ik mij er zelf ook flink aan te buiten gaan! :).

150 gr quinoameel
50 gr kokosmeel
50 gr kikkererwtenmeel
50 gr aardappel- of maiszetmeel
2 tl guargom
150 gr kokosolie
10 druppels stevia
2-3 el kokosbloesemsuiker of xylitol
4 grote appels
2 tl kaneel
evt 1 handje rozijnen

Meng de droge ingredienten goed door elkaar. Kneed de koude kokosolie en de stevia erdoorheen en zet het deeg even in de koelkast. Schil ondertussen de appels, snijd ze in kleine stukjes en bestrooi met wat kaneel. Vet een taartvorm in en druk 2/3 van het deeg in de vorm (bodem en zijkanten). Doe de appelstukjes erin en verkruimel de rest van het deeg erbovenop door het tussen je handen te wrijven.
Bak de taart 40-50 minuten op 175 graden.
Extra smultip: smeer wat vlierbessenjam op de bodem voordat je de appels erin kiept!

Last week my sweet baby girl turned four! Four years ago since I first became a mother. And now she's getting ready to start waldorf kindergarten. Although it is also a moment of letting go, watching her grow and blossom fills me with joy and I am so looking forward to wonderful kindergarten years ahead!
 
On birthdays, we've made it a tradition in our family to have apple pie for breakfast. Home made, off course, allthough the recipe keeps changing over the years. Last year we already had a gluten free, egg free, dairy free pie. This year it was also rice free, so I could indulge on it, too! :). This recipe is still in grams, I haven't had the chance to convert it yet. But wanted to share with you anyways!

150 grams quinoa flour
50 grams coconut flour
50 grams chickpea flour
50 grams potato or corn starch
2 tsp guar gum
150 grams coconut oil
10 drops liquid stevia
2-3 tbsp coconut palm sugar or xylitol
4 large apples
2 tsp cinnamon
optional: a handful of raisins

Mix dry ingredients well. Add cold coconut oil and stevia and knead. Put the dough in the fridge for a while. In the meantime, peel and cut the apples and sprinkle them with cinnamon. Use 2/3 of the dough for the bottom and sides of your pie, simply press the dough in the cake tin. Fill with the apples and spread the rest of the dough on top by crumbling it between your hands.
Bake for 40-50 minutes at 350.
For extra yumminess: spread some elderberry jam on the bottom of your pie, before adding the apples!

Stuffed Mini Pumpkins



Het is herfst. Dat vraagt om pompoenen! Deze dotjes vond ik in de plaatselijke natuurwinkel. Zelf blijk ik er niet zo goed tegen te kunnen, helaas, maar de rest van mijn gezin smikkelt graag een pompoentje. Ook deze vielen gelukkig helemaal in de smaak! Zelf at ik de vulling met wat gebakken aubergine (ook een meer dan prima combinatie, overigens). Dit recept is voor 4 personen.

Autumn has arrived. Pumpkin time! I happened to run into these sweeties in my local health food store. Unfortunately I can't handle them too well, but the rest of my family really looooves pumpkin. I'm glad to say these were very well received :)! As for me, I ate the stuffing with some baked eggplant (a very tasty combination as well, I may say). This recipe serves 4.

4 zoete minipompoenen
400 gram rundergehakt
3 handjes quinoa
1/2 paprika
1 grote tomaat
3 teelepels kaneel
2 tenen knoflook

Snijd de bovenkant van de pompoentjes af en hol ze met een theelepel uit tot je 1/2 tot 1 cm dikte overhoudt. Gooi de zaden weg (het vruchtvlees kun je eventueel meekoken met de quinoa). Zet de pompoentjes in een grote pan met een klein laagje water en stoom ze ongeveer 20 min met het deksel op de pan. Was de quinoa, snijd de paprika fijn en kook deze samen in ongeveer 20 minuten gaar. Bak het gehakt rul (gebruik hiervoor kokosolie of een ander natuurlijk vast vet), voeg de kaneel toe en op het laatste moment de knoflook en tomaat. Voeg ook het quinoamengsel toe en bak het kort even mee. Breng de vulling op smaak met zout. Vul de pompoentjes met het gehaktmengsel, serveer met het dekseltje of een takje verse munt of oregano.

*Ik heb ervoor gekozen de pompoentjes te stomen omdat gestoomd nu eenmaal wat makkelijker verteert. En het gaat een stuk sneller... Voel je vrij om ze op je favoriete manier te bakken of te grillen!

Geniet van de herfst en geniet van pompoen! Wel met je maten natuurlijk.

4 sweet mini pumpkins
0.9 lbs ground beef (stupid different scale systems...)
2/3 cup quinoa
1/2 bell pepper  
1 large tomato
3 tsp cinnamon
2 large cloves of garlic

Cut off the top of the pumpkins and scrape out the seeds with a teaspoon. Scrape until you've got a nice enough space for stuffing, leave the walls about 1/4 inch (you can choose to cook the flesh you scraped together with the quinoa). Steam the pumpkins for about 20 minutes in a small amount of water, use a large pot with the lid on. Wash the quinoa, cut bell pepper into small pieces and boil together for about 20 minutes. Bake the ground beef in a frying pan (use coconut oil or other naturally solid fat), add cinnamon. At the last moment add diced tomato and pressed garlic. Then add the quinoa mixture and stir for a little while. Add salt to taste. Fill the pumpkins with the stuffing and serve with their cute little lid on or a branch of fresh mint or oregano.

*I chose to steam the pumpkins instead of baking them because it is (somewhat) easier on the digestive system. And it's quicker. Please feel free to bake or roast them your favorite way!

Carrot coconut cupcakes GF, EF, DF


2 grote wortels
130 gram meel (ik gebruikte quinoa-, kikkererwten- en kokosmeel)
30 gram kokosrasp
20 gram palmsuiker (of andere favoriete zoetmaker)
3 theelepels kaneel
2 theelepels bakpoeder
1/2 theelepel baksoda
1 theelepel guargom
150 ml rijstmelk, notenmelk of andere favoriete melk
25 gram kokosolie, au bain marie gesmolten
10 druppels stevia

Verwarm de oven op 175 graden. Rasp de wortels en zet ze apart. Meng alle droge ingredienten goed door elkaar.  Meng de melk, stevia en kokosolie (laat de melk eerst op kamertemperatuur komen, anders stolt de kokosolie weer) en voeg die toe. Roer nu met een vork de geraspte wortel door het beslag, totdat het goed verdeeld is.
Vul de vormpjes en bak de cakejes ongeveer 25 minuten gaar. Laat ze nog even afkoelen in de muffinvormpjes, voordat je ze eruit haalt.

2 large carrots 
1 cup flour (I used quinoa, chickpea and coconut flour)
1/3 cup grated coconut 
2 tbsp palmsugar (or preferred sweetener)
3 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1 tsp guar gum
3/4 cups rice milk or nut milk or other preferred milk alternative
11/2 tbsp melted coconut oil
10 drops liquid stevia

Preheat oven to 350. Grate the carrots and set aside. Mix all the dry ingredients. Mix together milk, stevia and coconut oil (be sure your milk is at room temperature, otherwise the coconut oil will harden) and add to the dry ingredients. Stir in the grated carrots with a fork, until the carrot is wel mixed into the batter. 
Bake for about 25 minutes. Let your cupcakes cool off before taking them out of their cups.

Beautiful Sweden!


Deze zomer vertoefden wij een tijdje in het prachtige Jämtland, Noord-Zweden. De natuur is er overweldigend en in alles aanwezig. Weids, ruig, betoverend. Vrij.

This summer we have been enjoying beautiful Jämtland, North Sweden. Where nature is overwhelming and present in every aspect of life. Grand, rough, magical. Free.




Blauwe bessen en 'hjortron' zijn volop te vinden. Hjorton of bergframbozen zijn oranje, braam-achtige bessen met een bijzondere smaak en een overload aan vitamine C. Ze worden traditioneel vaak verwerkt in jams en taarten. Ook lekker, maar puur en vers is natuurlijk het allerlekkerst! Onze oogst heeft in ieder geval de keuken niet gehaald.

Blueberries and 'hjortron' grow in abundance. Hjortron or cloudberries are orange, raspberry-like fruits with a distinctive taste and huge amounts of vitamin C. Traditionally, they are often used for jam or pies. I must admit it sounds good, but the taste of a pure and fresh cloudberry can't be beaten. Ours never made it to the kitchen!



 
Het eten in Zweden is vaak warm en calorierijk. En op een plek waar het klimaat koud is, de natuur ruig en het leven zich voornamelijk buiten afspeelt, voegt dat ook. Ook ik merkte heel duidelijk dat mijn lichaam meer behoefte had aan warm, stevig eten. 

Food in Sweden is otfen warm and dense. In a place where the climate is cold, nature is rough and life is mostly lived outdoors, that makes sense. After a few days of living the swedish outdoor life, I too felt that my body needed more warm, substantial food. 




 
Lunch en avondeten gebeurt vaak buiten en wordt bereid boven een open vuur. Geschikte alternatieven vinden voor ons gezin was even flink zoeken, want Jämtland is dun bevolkt en de eerste natuurvoedingswinkel was op een uurtje rijden... :( Biologische producten liggen er, net als bij ons, wel in de supermarkt maar de keus is beperkt. Als het om gluten- en zuivelvrije producten gaat is het aanbod wel erg ruim.

 Eland- en rendiervlees is bijna overal verkrijgbaar en is altijd grasgevoerd. Gedroogd is het een echt survival-food: licht om mee te nemen en enorm veel calorieen. Ook het hart wordt hiervoor vaak gebruikt, wat superrijk is aan vitamine A. Al moest ik aan de smaak wel even wennen, toen ik een stukje gedroogd rendierhart dat ik van de buurman kreeg...


Lunch and dinner is often enjoyed outside, prepared over an open fire. It ook some effort to find tasty alternatives for our family. Being in the middle of nowhere, the nearest whole foods store was at an hours drive :(. Some organic products are found in regular supermarkets, though there's not many options. Most supermarkets offer a wide range of gluten and dairy free products.  

Elk and reindeer meat is available in most supermarkets and is always grass fed. Dried elk or reindeer is a true survival food: light in weight and dense in calories. Often the heart is also used for drying, which is super rich in vitamin A. Although it took some getting used to the taste, when our neighbour handed me a piece of dried reindeer heart...

Bounty dream bonbons



Bounty. Één van de weinige chocoladerepen die ik bij tijd en wijle écht lekker kon vinden. Maar nu eet ik al een poos geen suiker meer, en dus ook geen bounty's. Niet dat ik het mis. Ik heb er jáááren niet meer aan gedacht, dat het bestond. Bounty.

Ken je dat, een aha-erlebnis? Zo'n gevoel dat er opeens bijna letterlijk een lampje boven je hoofd gaat branden, net als in de Donald Duck? Ik zit inspiratieloos achter mijn computer, terwijl ik voor de zoveelste keer door mijn Hawaiiaanse facebookvriendin Lisa word doodgegooid met allerlei natuurschoon en bounty-stranden. 


Bounty. One of the very few chocolate bars I could really enjoy every once in a while. But since I quit sugar voor quite some time now, I haven't touched one lately. Not that I miss it. I hadn't thought about them for years, that they even existed. Bounty.

Have you ever had an aha moment? The feeling that a bulb lights up above your head, like in a comic book? I'm sitting behind my laptop, having absolutely no inspiration, checking my email, checking my facebook, you know how it goes, while I'm being spammed with pictures of wonderful nature and bounty beaches by my Hawaiian facebookfriend Lisa.

Ik ga een bounty maken!

Chop chop, de keuken in! Snufje dit, theelepeltje zus, drupje zo... en als laatste een laagje rauwe chocola eroverheen. Nou, dat zag er dus niet uit. Een vulkaanuitbarsting (ja, ook via facebookvriendin Lisa) is er niets bij. Lekker was het gelukkig wel, en met dat uitgangspunt begon ik dus maar opnieuw. Een simpele oplossing voor het vulkaanprobleem en zie hier: bounty dream superfood bonbons. I'm loving it ;)

Chop Chop, heading for the kitchen! Pinch of this, teaspoon of that, 2 drops of whatsitcalled... and, finally, drip with a layer of raw chocolate. Well, that looked like... like not so good. A volcano eruption (yes, also through facebook friend Lisa) looks yummier. It tasted good though, and so I decided to do it over again! A simple solution to the volcano problem, and here it is: bounty dream superfood bonbons. I'm loving it ;)

Voor de vulling:

1 cup kokosrasp
2 theelepels honing
2 theelepels rijststroop
1,5 - 2 eetlepels kokoscreme/santen
1 eetlepel kokosolie
2 eetlepels chiazaad
1/2 theelepel water


Voor de chocola:

1/4 cup geraspte cacaoboter, au bain marie gesmolten
1/4 cup (rauwe) cacaopoeder
1 theelepel kokoscreme/santen
Zoeten naar smaak met je favoriete zoetmiddel


(Let op: ik gebruik Amerikaanse maten. 'Theelepel' is, als je gewoon bestek gebruikt, ongeveer een eetlepel. Handige maatschepjes kun je kopen bij oa ikea, blokker, xenos of de grotere appie). Roer alle natte ingrediënten door elkaar en voeg dan de kokosrasp en als laatste de chiazaadjes toe. Roer en kneed alles goed door elkaar. Zet de massa een halfuurtje in de koelkast.

Rasp ondertussen de cacaoboter en laat deze au bain marie smelten. Voeg cacaopoeder, zoetmiddel en santen toe en roer alles goed door elkaar. Zet ook dit even in de koelkast.

Maak van de kokosmassa kleine hoopjes met een platte onderkant. Zet ze een halfuur in de vriezer. 

Prik daarna een tandenstoker in de bevroren kokoshoopjes, doop in de chocolade en draai even rond. Herhaal dit. Zet de bonbon in een schaal of bak en zet deze nog een uurtje in de koelkast tot de chocola helemaal hard is en de kokosmassa wat ontdooid. Verwijder dan de tandenstokers.

For the filling:

1 cup grated coconut
2 tsp honey
2 tsp rice syrup
1.5 - 2 tbsp creamed coconut
1 tbsp coconut oil
2 tbsp chia seeds
1/2 tsp water


For the chocolate:

 1/4 cup grated cacao butter, melted in a bain marie
1/4 cup (raw) cacao powder
1 tsp creamed coconut
sweeten to taste with your preferred sweetener


Stir all the wet ingredients together. Then add grated coconut and chiaseeds. Stir and knead until well mixed. Put the mixture in the fridge for half an hour.

In the meantime, grate cacao butter and melt in a bain marie. Add cacao powder, sweetener and creamed coconut. Stir well. Also put this mixture in the fridge for a short while.

Take out the coconut mass and form small heaps with a flat bottom. Put in freezer for half an hour.

Then stick toothpicks in the frozen coconut heaps and dip them in the chocolate mixture, while turning them around a few times, and repeat. Put the bonbons in a dish and put them in the fridge for another hour or so, untill the chocolate is hardened and the coconut mass is somewhat defrosted. Then take out the toothpicks.
